The Family Cookbook: Strawberry Pie

I love this recipe! It was a favorite of mine as a child and I still make it today. It is one of my mom's submissions for the family cookbook. My grandma even wrote this one down in her recipe file prior to the cookbook's existence. When strawberries are in abundance, this is the recipe to choose.

Strawberry Pie

Crust:
  • 1 stick butter. You choose salted or unsalted. It needs to be room temperature, this isn't a pastry crust.

  • 1 cup flour. This is all purpose flour.

  • 1 cup broken nuts. I remember this with pecans, and that is what I always use. I do chop mine up a bit smaller than broken. I like a consistent size of nut pieces in this.

Mix together, press into pie plate. Bake 25 minutes at 375 degrees or until lightly brown. Cool completely before adding the filling. That one should be obvious since we're not putting this back in the oven.

Filling first layer:
  • 1 pint strawberries, sliced. This is fresh strawberries, don't use frozen or canned in this recipe - ever.

  • 2 bananas cut up in 2 tablespoons of lemon juice. This means sliced bananas put into lemon juice to keep them from browning. Don't go adding the fruit just yet to the pie. Read through the whole recipe first.

2nd layer:
  • 8 oz. package cream cheese.

  • 4 tablespoons honey

  • 1 teaspoon vanilla

  • 1 cup whipping cream (whipped) or cool whip. So much better with the whipped cream in my opinion.

Mix with beater and spread on pie crust. Put bananas on top and sides. Then pile strawberries on top.

See what I mean about reading the whole recipe first? The fruit in the first layer actually goes on top of the 2nd layer. Keep this one in the refrigerator, it was assumed you weren't completely clueless back then.

This pie is fruity and creamy and fresh tasting. The nut crust adds balance and texture. Just a really good pie all around. I like to put the bananas down on top of the crust first, then the cream filling, then the strawberries. I just like how it looks, no other reason.
