The Family Cookbook: Mixed Vegetable Grill

This recipe comes from my big sister! She was an adult at the time this book was put together, I am quite a bit younger than her. If memory serves, she also did some of the typing. This book really was a labor of love!

This recipe is under the Quick to Fix section. It's a lot like a sheet pan dinner. I like to think of it as a broiler pan dinner. This one cooks up quickly and is great for when you don't know what you want to eat, only that you want to eat.

Mixed Vegetable Grill

This recipe is straightforward as is, so I don't think I need to elaborate. You can change out your vegetables to ones you like, keeping in mind that they need to cook through quickly or be good as crisp tender. I think the sausages should be smaller, think breakfast links, or cut into smaller pieces so they can cook through quickly. This is under the heat of the broiler after all. You'll need a frying pan to cook the eggs, so this isn't an entirely one pan dinner.

I like how much variety this recipe offers. A little toast, a little egg, a sausage or bacon, and a little veg, too. Also butter not seed oil?!? What's not to love about that? It sounds perfect for those nights when I want something simple, that everyone can find something they like, and minimal clean-up!
