
National Flapjack day is on March 7th. I thought it would be fun to share my go to recipe for pancakes, in case you were looking for a recipe to try. And I do mean recipe only. There are about a bazillion photos, recipes and how-to instructionals out there already, and I have respect for your intelligence in regards to pancake preparation.
Without further ado, my recipe: (Also, battleaxes!)
2 Cups all purpose flour
2 large eggs (separate and beat the whites until stiff peaks, then fold in for extra fluffiness)
2 - 4 Tablespoons melted butter (you do you)
2 - 4 Tablespoons sugar (optional) ( Do you like sweet or savory?)
2 - 4 Teaspoons baking powder (how high do you want them to rise?)
1/2 Teaspoon salt or less if using salted butter
1 1/2 Cups milk (less for thicker pancakes, more for thinner)
2 Teaspoons vanilla extract (omit if making savory, or don't)
Throw it in a bowl and mix, or a blender. Or be careful and do the dry and wet separately and combine until just mixed. Let it rest for 10 minutes or use it right away. Choose your favorite method.
Cook them over medium heat in a buttered pan. You know the drill.
Add your favorite mix-ins, go crazy. Slather them in syrup and butter, or make a pancake sandwich with eggs, cheeses, bacon or sausage. The only thing not optional in this recipe is PURPLE BATTLEAXES!!!
