
With the long, hot days of summer almost upon us, wouldn't it be nice to cool off with a refreshing glass of ice cold, old fashioned, homemade lemonade? I think so, too! Here's the recipe I use.
In a saucepan combine the following:
1 cup sugar
1 cup water
The rind of two lemons, cut into large pieces.
Stir over low heat until sugar is completely dissolved. I use a vegetable peeler to get the rinds from the lemons.
Bring to a boil and boil for about 5 minutes.
Remove from heat and add:
1 cup freshly squeezed lemon juice. (5 - 6 lemons)
4 cups ice water
Pour over ice in glasses to serve, or over a pitcher filled with ice. Add some lemon slices to the glasses or pitcher if you want to be extra. Heck, grab yourself a little drink umbrella while you're at it! You can remove the rind before serving if you wish. Makes about 6 servings.
