Grandma Files: Seven Layer Salad

There are many reasons I love this recipe file of my Grandma's, not only because it was hers and I love her, but because there are little slices of who she was inside. Today's pull is a great example of what I am talking about.

When my Grandma was done with her bible verse study, she reused the note card to jot down a recipe. Nothing went to waste. I will let you, with encouragement, look up the verses yourself. I think Judah - v.24 is within this book of Chronicles. I would make a guess that Grandma was looking for mention of the tribe of Judah, the tribe Jesus came from.

Let's get to this recipe that my Grandma saved.

Seven Layer Salad

  • Large salad bowl, half full of shredded lettuce. Before you break out your shredder, this means thinly sliced, the appearance of shreds, or you could tear the lettuce leaves into small pieces. No mention of type of lettuce. I think it was iceberg, but you can use any you like. I think iceberg, because it is very crunchy. This salad is all about layers of textures.

  • 1/4 to 1/2 cup chopped celery. How ever much it takes to get a complete layer. I would not chop them too finely. You want to be able to stab them with a fork. Salad fork, if you're feeling fancy.

  • 1/4 to 1/2 cup chopped green onion. Both the green and white parts, enough to make a layer.

  • 1 10 oz package frozen peas cooked and drained. This means boiled in water and drained. I think our more modern tastes would just thaw the peas and drain them without cooking.

  • 1 pt. mayonnaise. One pint.

  • 2 TBSP sugar. TBSP is tablespoon. Put on top of mayonnaise.

  • 4 to 6 oz. grated cheddar cheese.

  • 8 fried bacon strip crumbled. Any salad with bacon sounds promising, in my opinion.

Directions:

Layer the ingredients on top of the lettuce in order listed. Cover with plastic wrap. Do not put a lid on the bowl. Refrigerate for 8 hours. Can be layered in a 13x9x2 inch dish. Serves 18.

I don't think there is anything that really needs deciphering in Grandma's instructions. The instruction for no lid is probably because of condensation making the salad soggy. I think the 13x9 dish is probably of clear glass, so you can see the layers you went through the trouble of making. I'd probably use a clear salad bowl for the same reason.
